Parrothead Pasta



This recipe was created by Jeff Blank, a chef who just happened to cater the Buffett's wedding. Even if all ingredients aren't available to you, this will make a killer meal for ya.

2 large smoked lobster tails
24 large shrimp
24 large smoked scallops
1/2 lb. blue crab meat
1/2 lb. dry spinach fettuccini
1/2 lb. dry egg fettuccini
2 cups white wine
1/4 cup olive oil
3 tbs minced garlic
3 tbs minced shallots
1/4 cup lemon juice
2 tsp mixed dried herbs (equal parts basil, oregano & thyme)
2 tbs salt
1 cup sun-dried tomatoes, julienned
2 cups mushrooms, quartered
6 oz. Parmesan cheese, grated
1 cup Roma tomatoes, julienned
1 bunch green onions, chopped
1 cup spinach, shredded
1 stick butter

Cook pasta halfway and thoroughly drain. Set aside. Add white wine to skillet. Cook over high heat until 1/2 the wine has evaporated. Add olive oil, garlic, lemon juice, shallots, herbs, salt, sun-dried tomatoes, mushrooms, Parmesan cheese and seafood to skillet. Saute on high for 3-4 minutes. Add pasta and the rest of the ingredients. Cook 5 more minutes. Enjoy!
